Snake Gourd With Chicken


5-8 small snake gourds, sliced at an angle. If the gourd has mature seeds
inside, remove them.
2 Thai hot chili pepper or 1 jalapeno, sliced ***Marinade:
3 cloves garlic, chopped ¼ tsp. powered garlic
1 onion, sliced thinly 1 tsp. soy sauce
2 cups raw chicken breasts, sliced and marinated*** 1 tsp. cooking wine
1 tsp. real chicken base ¼ tsp. sugar
salt and pepper to taste ¼ tsp. pepper
2 tbsp. olive or vegetable oil 1 tsp. cornstarch
½ cup water


Marinate chicken in marinade for 10 minutes. Stir fry chicken, garlic, pepper and onion in hot oil for
5 minutes. Add sliced snake gourds, chicken base and water. Continue cooking until snake gourd
is tender. If desired, 1 tsp. cornstarch can be added to the stir-fry at the last minute to make the
liquid more gravy-like.
This recipe can also be prepared using asparagus or long beans.

Pudalangai Pooranam – Stuffed Snake Gourd


Ground to a smooth paste
one foot long tender snake gourd 3/4 cup grated fresh coconut
1 tbsp lime juice 3-4 green chillies
3/4 salt (to taste) 2 tsp cumin seeds
2 tbsp oil 2 tbsp chopped coriander leaves
1/4 cup water
2 tsp oil 1 dried red chilli, halved
1/2 tsp mustard seeds 1 sprig curry leaves


1. Chop off and discard both ends of a snake gourd. Slice snake gourd into 1 inch pieces, without peeling it. Scoop out seeds from within the slices to make hollow cylinders. Set aside

2. Mix spice paste with lime juice and half the salt.

3. Heat oil for tempering in a pan over moderate heat. Add remaining ingredients for tempering in the order given. When mustard seeds splutter, add spice paste and fry over low heat for 1-2 minutes, stirring continously.

4. Remove pan from heat. Cool and stuff snake gourd cylinders with spices.

5. Place a frying pan over moderate heat and add 2 tbsp oil. Add stuffed snake gourd, sprinkle with a little water, and cook over low heat for 8-10 minutes, till tender. Stir gently, taking care not to break them.

Serve hot as a side dish with rice or roti.


SnakeGourd mixed with leeks

SnakeGourd mixed with leeks is a simple dish you can use as a side with rice or with some bread. Snake gourd is a vegetable which gives a lot of nutrients to our body, especially good for people having constipation. With few ingredients gourd mix with leeks is a delicious healthy dish you can prepare in maximum 20 minutes.


• 1 large snack gourd skin peeled off and thinly sliced
• 3 tbsp finely chopped leeks
• 3 tbsp finely chopped onions
• 2 clove garlic finely chopped
• 3 dried chillies fried and chopped
• 5-6 curry leaves and 1 piece ramp leaf
• 1 tbsp olive oil
• salt and pepper for taste


1 Add 1 tbsp olive oil to a non stick pan and stir fry the chopped onions, leeks, garlic and dried chillies, curry leaves and ramp leaf until they turns golden brown color.
2Add the thinly sliced snack gourd to the mixture and mix well. Season with salt and pepper.
3 Cover the pan with a lid and cook on low heat for 10 minutes and serve with rice or bread.

Fried Snake-Gourd


1 snake gourd
2 tbsp oil
1 tsp cumin seeds
1 tsp black pepper
Salt to taste


Slit and discard the spongy portion and seeds from the gourd.
Cut snake gourd into round slices.
Heat the oil in a pan and add slices.
Add salt and fry on slow flame.
After few minutes, add cumin seeds and pepper.
Stir well and serve hot crispy snake gourd.

Snake Gourd Raita


1 sliced snake gourd
8 oz plain yogurt
1 tsp of grated coconut
1 green chili

Fry mustard seeds in 1 tsp oil till they spatter (optional)


Slit and discard the spongy portion and seeds from the gourd.
Cut gourd into small pieces.
Steam in microwave with little water.
When half cooked, remove and cool and
Mix with yogurt.
Grind coconut with green chili to a paste.
Add this paste to the yogurt mixture.
Add salt to taste and garnish with coriander leaves.

For additional seasoning, top with fried mustard seeds (optional).

Snake Gourd Salad


1 snake gourd
2 cups plain yogurt
2 green chilies
1 tsp salt
1/2 tsp cumin powder
Cilantro and mint leaves for garnishing


Slit and discard the spongy portion and seeds from the gourd.
Cut the gourd into very fine pieces.
Chop green chilies finely.
Mix salt and cumin powder to the yogurt and add the gourd and chili pieces to it.
Sprinkle cilantro and mint leaves on top.
Serve chilled.

May be seasoned with mustard seeds and asafoetida, in hot oil.
Ground coconut paste may also be added.

Chilled Snake-gourd


Snake Gourd
8 oz plain yogurt
1 medium sliced onion
2 sliced green chilies
Curry leaves
A pinch of mustard seeds
Salt to taste
Oil for frying


Clean snake gourd and remove center.
Slice thinly and deep fry, till almost crispy.
In a separate pan fry the mustard seeds, sliced onions, curry leaves and sliced chili (in that order) in a little oil.
Once cooked, add the salt and fried snake-gourd. Leave it to cool.
Add the yogurt and put it in the refrigerator for at least a couple of hours.
Serve chilled.
